Sourdough Brioche Buns

The perfect sourdough brioche bun recipe!

This week I wanted to share with you my recipe for yummy sourdough brioche buns! These buns can be paired with many different sandwiches to add incredible flavor! I chose to make mushroom and swiss burgers with these, but the possibilities are endless! I also opted to use leftover buns for my husband’s lunch meat and cheese sandwiches for lunch. This made lunch even tastier and more filling.

INGREDIENTS

  • 100 g of Active Sourdough Starter

  • 540 g Bread Flour

  • 2 Eggs (room temperature)+(1 Egg & 1 tablespoon water for Egg wash)

  • 120 g Salted Butter (softened)

  • 200 g Whole Milk

  • 50 g Sugar

  • 10 g Salt

INSTRUCTIONS

Preheat oven to 350°

  1. Warm milk to be lukewarm. Combine milk and sugar until sugar has dissolved.

  2. Next, add your starter, flour and 2 eggs to your bowl or stand mixer and mix into a rough dough and let it rest for 30 minutes.

  3. After resting, add butter and salt. Knead well either by hand or in your stand mixer until fully incorporated. This can take several minutes depending on the mixer you use.

  4. The sough should be elastic, smooth and pulling away from the sides of the bowl. Once this has occurred, transfer dough to large bowl for bulk fermentation and cover with plastic wrap.

  5. Once dough has rose at least 30%, shape your dough into 50g round ball portions.

  6. Place on baking sheet with parchment paper and space allowing for growth. Place on counter and cover with dry flour sack towel/tea towel.

  7. When buns are puffy, brush egg wash/water mixture over dough and place In preheated oven

  8. Bake buns for 15 minutes or until golden brown.

  9. Once done, brush with butter and serve!
